  • Flor de Tauste is produced by Tauste Ganadera, in Villa de Tauste (Zaragoza). It is quite a new cheese.

Milk type

Aroma and taste

  • Aroma of medium-low intensity which is increased with maturation. Lactic smell, with hints of hay and grain. Slight taste of sweetness at first, which combines well with the acidity. An aftertaste cereals and raw nuts accompanied by a slight touch of mushroom. The rind has a persistent taste.

Strength and texture

  • Matured for 3-5 weeks. Mild strength, but becomes stronger with age. It has a semi-soft texture, with a sticky middle. Semi-closed texture with some small irregular holes. When young the dough is crumbly and dry harder. Somewhat rough rind.

Shape, weight and size

  • Small rectangular cheese with rounded edges. Sides 13.5cm by 6,5cm, height 3.5cm, weight 250g.


Yellow-ish rind, sometimes mixed with pink and orange tones on the edges. White interior in the centre, with ivory edging along the inside of the rind. Over time, it inclines towards beige.
