Felciata di Calabria is a fresh, goats. milk cheese produced in spring and summer in the province of Cosenza, especially in Morano Calabro and Pollino Cosenza.
The curd is placed in buckets made from mulberry or walnut, with alternating layers of curd and ferns. The cheese has a rundles, smooth surface and a tender, delicate, light texture. It has a porcelain white colour and a fragrant flavour and aroma.
