E Broucaou cheese
E. Broucaou is a pasteurised goats' milk cheese, created in 1996 and the original of a range of cheeses from Haute-Ariège in the Midi-Pyrénées region of France. The natural rind is dark chestnut in colour and it is a cooked and pressed cheese, with a smooth, firm yet soft and smooth texture with no holes. The round cheese matures for 3-4 months and weighs about 4.6kg.
