E. Bamalou cheese
E. Bamalou cheese is produced in Castillon-en-Couserans, in the area of Foix, situated in the Midi-Pyrénées region of France. It is made with unpasteurised ewes' and goats' milk. It is pressed and uncooked with a natural rind which is a brownish colour mottled with red. It has a soft and oily texture and a sweet and creamy taste. It is produced in two formats: a small one of 450g and a larger one of about 600g. The maturation period is about a month and a half.
