Sweet corn is the result of a naturally occurring recessive mutation in the genes which control conversion of sugar to starch inside the endosperm of the corn kernel. Unlike field corn varieties, which are harvested when the kernels are dry and fully mature, sweet corn is picked when immature and eaten as a vegetable, rather than a grain. Since the process of maturation involves converting sugar into starch, sweet corn stores poorly and must be eaten, canned, or frozen before the kernels become tough and starchy. Sweetcorn kernels are one of the traditional ingredients of succotash.

- Tip into a plastic bowl with 3 tablespoons of water>
- Save the planet! Cover with a saucer not plastic wrap.
- Microwave for 3 minutes
- Drain and add a knob of butter, sprinkle with a little salt and enjoy
How to cook whole sweetcorn ears on a barbecue
- Soak in cold water for 1 hour
- Grill on a barbecue for 25 minutes, turning to prevent burning.
- Rub with butter, sprinkle with a little salt and enjoy.
