Ingredients

- 30 g (1 oz) coriander leaves and stalks
- 70 g (2.5 oz) roasted peanuts - try to rub some of the salt using a towel if using highly salted peanuts
- 75 ml (2.5 fl oz) peanut oil
- 1 large fresh green chili
- 1.5 tablespoons lime juice
- 1 tablespoon grated ginger
- 1 garlic clove, crushed
Method
- Add all but the oil to your food processor
- Drizzle the oil slowly into the mix whilst constantly blending
- Store in a sterilised jar
