Champ-sur-Barse is a traditional farmhouse cheese made by Madame Monique Martin using milk from her own farm. It is produced in the place of the same name as the cheese in the Champagne-Ardenne region of France. The curds are ladled into the moulds to drain and it comes either as cottage cheese or slightly salted with cracked pepper, herbs, coated in ash or plain.
