Carré de l'Est cheese
Carré de l'Est is a soft cows’ milk cheese produced the lush pastures of Alsace and Lorraine. It is not pressed and is matured in cellars for 3-4 months. It is washed and turned by hand to give it is orange-red colour and sometimes it is covered with a bloomy mould.
A strong, salty, tangy, square cheese, which has a taste similar to smoked bacon, Carré de l'Est has small, regular holes in the centre. The rind is sticky and elastic and the cheeses with the bloomy rind are superior to those which do not.
