Canestrato Trentino cheese
Canestrato Trentino is a compact, semi-cooked, whole cows' milk cheese from Vallagarina in the Italian region of Trentino-Alto Adige. Produced using goat and/or lamb rennet, the cheese has a flavourful and spicy taste, a pale or white interior with thin, small holes and a wrinkled rind. It is cylindrical in shape with a diameter of 20 to 22cm, a height of 10 to 12cm, and a varying weight of 3 to 3.5kg. It is ready for consumption after 90 days for cooking and 6 months for grating.
