Caciotta vaccina al caglio vegetale is a cheese made from mixed breed cows' milk and rennet made from the flowers of artichokes and cardoons. It is produced in the province of Pesaro and Urbino, in particular in the territory of Montefeltro in the Marche region of Italy.

Matured for 2 to 6 months, it is cylindrical, with a soft, straw-coloured rind. It has a compact texture with a few holes. It has a full, mellow flavour, with hints of milk enzymes.
