Caciotta dei monti della Laga cheese
Caciotta dei monti della Laga is a soft table cheese made from ewes' milk in the province of Rieti in Italy's Lazio region. Sometimes up to 30% goats' milk can be added to it. It is available plain or with the addition of black pepper or chilli. It weighs 500g-2kg, has a pale yellow interior and is matured for 20 to 30 days. It can be sweet or slightly salty in taste and is produced from March to October.
