Formaggio caprino del Cilento cheese

Caprino del Cilento is a basket-moulded cheese produced in the province of Salerno from goatsβ milk.
Having a cylindrical shape the cheese has a slightly sweet and fruity flavour when made with calf rennet or when it is fresh. If is mature, or kid rennet is used, the taste is more intense and spicy.
After being in the basket mould for 2 days the cheese is matured for one month or more, depending on whether it is to be consumed fresh, or made suitable for grating.
