Formaggiola caprina cheese

Formaggiola caprina is a goats' milk cheese from Emilia-Romagna, especially in the Apennines of Piacenza Luretta Val and Val Nure. It can also be made with cows' milk. It can be consumed fresh after 15-20 days or can be matured for up to 2 months. Fresh cheeses have a whitish pale brown rind which becomes harder as it matures. The white to straw yellow interior has small wholes of various sizes. Cylindrical in shape, it weighs about 2kg, is 20-25cm in diameter and is 5-8cm in height.
