Method

  1. Cut the leeks in half lenghtwise, then in half again and wash very thoroughly.
  2. Cook in boiling salted water for 10 minutes. Drain well.
  3. Make the sauce, add the leeks and all but 1 tablespoon of the cheese; set aside to cool.
  4. Roll out the pastry into a 10" square and spread the leek mixture over the centre
  5. Damp the edges of the pastry and close together to form an envelope
  6. Brush the top with milk, sprinkle with the remaining cheese and bake in a hot oven (220° C - 425° F - Gas 7) for 25-30 minutes
