Description

The Edami cheese was named after the Dutch Edam seaport where it has had a great market up to now. The surface of the Edami cheese is even, only a small number of round holes with a size of a pea can be found on the surface of a section but it is not considered as a fault if there are no holes at all. The Edami cheese which often has a yellowish cheese texture belongs to the cheese having a crumbly structure and mild taste and smell. Its mild and sweetish taste and flexible state can be attributed to the fact that a part of the lactose is washed out from the coagulated milk in the course of the production and that is the reason why it is sometimes called “washed cheese”. Despite the foregoing, the more matured Edami cheese, however, may have a definitely piquant taste.
