Suave de Oveja is produced by Los Corrales, in Almedijar, a town in the province of Castellón, which is located in the natural park of the Sierra de Espadán. It is made with [[Pasteurised|pasteurised]] [[Ewes|ewes]]’ [[Milk|milk]] and [[Lamb|lamb]] [[Rennet|rennet]] and is matured for 40 days. It comes in cylinders weighing 1.2kg.

The washed rind is yellow due to its being rubbed with [[Olive oil|olive oil]].  The interior is light yellow in colour and has irregularly distributed holes throughout.  The texture is supple and firm.  It has a pleasant, [[Lactic|lactic]] aroma and the sheepy, sweet flavour typical of Mediterranean [[Cheeses|cheeses]].  It has a long aftertaste reminiscent of [[Nuts|nuts]].
