===Method===

| Cook the [[Pasta|pasta]] as directed on the packet.  9 to 11 minutes in [[Boiling|boiling]] [[Salted|salted]] water should be fine for [[Macaroni|macaroni]].
| In the meantime, lay the [[Smoked fish|smoked fish]] over the [[Bay leaves|bay leaves]] in a [[Frying pan|frying pan]] and cover with [[Milk|milk]].
| Bring to the [[Boil|boil]] and gently [[Poach|poach]] for 5 minutes or until the flesh flakes easily.
| Drain and reserve the [[Milk|milk]].
| Remove the [[Fish|fish]], discard the skin and any [[bones]] and [[Flake|flake]] the [[Fish|fish]] and set to one side.
| Melt the [[Butter|butter]] in a saucepan and add a grind of [[Black pepper|black pepper]]
| [[Saute]] the [[Mushrooms|mushrooms]] in the [[Butter|butter]] for a few minutes then add the [[Flour|flour]], stir well and cook for another minute or so.
| Lower the heat,and gradually add the [[Milk|milk]], stirring.
| Bring back to the [[Boil|boil]], and cook for 3 minutes, stirring well.
| Add the [[Grated|grated]] [[Cheese|cheese]] and a pinch of [[Salt|salt]] and the flaked [[Fish|fish]].  Heat for a few minutes more and then add the cooked [[Pasta|pasta]].
| Heat the [[Passata|passata]] and season the [[Salt|salt]] and [[Black pepper|black pepper]] and a  [[Herbs|herbs]] of your choice.
