Waterloo cheese
Waterloo is an unpasteurised cows' milk cheese, which was originally produced on the estate of the Duke of Wellington, hence its name. It is now made by Village Maid Cheese in Riseley, Berkshire.
The cheese a mould-ripened soft cheese, with a yellow interior. The rind is a grey/rust colour and the cheese itself is runny, buttery and lightly salty towards the outside, with a firmer consistency and more acidic flavour towards the centre. It is produced in 750 g rounds.
