As a former employee of Pan American World Airways, I visited 100+ countries around the world and was able to satisfy my 'itch' of all types of cuisines. During my career, I was selected for a special Cordon Bleu corporate course specializing in teaching/training with some of the most delicious & world renown "fancy" dishes in the world. It was superb training and has carried me over into several high-profile culinary positions around. I am grateful, of course. These days I am semi-retired, living in Dallas, TX & so concentrate on Southwestern and bar-b-que cuisines. As a Scottish descendent, I am also quite interested in Scottish/Celtic foods and the restaurant industries in "Alba-land." Hoot, mon!
