Treccia di Santa Croce di Magliano cheese
Treccia di Santa Croce di Magliano is a cows' milk cheese from the Molise region of Italy. It is a spun cheese which is cut into thin strips of about half a centimetre and placed in a bowl full of boiling water. The strips are then transferred to a bowl of cold water for 10-15 minutes and finally placed in yet another container of water which has been previously salted, boiled and cooled for a further 20 minutes. The strips of cheese are then plaited to form a braid and can be consumed immediately or left for 6-7 days.
