Making sourdough bread in a breadmaker

I've made a sourdough starter, but am looking for a recipe to make sourdough bread in my Panasonic SD255. Do you have a sourdough recipe?

I passed the question to our bread expert, her answer is quoted below.

Just to add that on the only breadmaker that I know much about, The Pansonic (and its many variants), there is a French Bread setting which is a very long bake and rise cycle [5 hours plus].

If you have a different breadmaker I would seek a similar setting.

This is tricky one! I don’t see why you can’t make it in a breadmaker, as it is just bread made with wild, as opposed to commercial yeast. However, sourdough does take longer to rise in general and the automation of the breadmaker probably wouldn’t allow enough enough time for it to rise properly. I would suggest letting the machine do the mixing and the rising, then remove the pan from the machine. Knock back the dough for a final time, return to the pan and allow dough to rise again in the pan, before putting it back in the machine and bake on French Bread setting.

Not sure whether it would work, but worth a try with any general sourdough recipe.
