I think onions etc are fine, but I do wonder if keeping the same quantity of chilli would make the dish too hot for some people, although I would be fine with it personally. Re fats and oils, it depends whether you are cutting down on the ingredients in which you are frying, eg, fine if cooking onions in the oil and keeping to 4 servings, BUT if you are using the oil to fry meat for 2 servings, then I think the oil quantity should be reduced as well.
