  • 400g small pickling onions

  • 2 dried ancho chillies

Help! Your recipe does not mention rinsing the shallots before putting them in a jar. Is that an error or is it not necessary? Also does it taste better if the sherry and cider/wine vinegars are 50/50? Thanks --JuliaBalbilla 15:18, 31 October 2010 (GMT)

An omission on my part - now amended.

I have just made this batch with 50/50, though from my ingredient picture from an earlier batch, I think I may have already made that batch 50/50 too.

I would say yes, just because the sherry vinegar tastes so good. I would actually try test-tasting small mixes of vinegar to see what you prefer first. After all, that's about 90% of the flavour of pickled onions.

Thanks. Hope you enjoy the pizzas. Haven't made one for ages. I will try 50/50 using Balsamic sherry vinegar from Sierra de Cazorla. It is wonderful stuff and I have only seen it at food festivals. I do wonder though if it might be wasted on pickled onions!! One other thing, do you mean 2 tsp jaggery rather than tbsps - see you note above. I have some jaggery which I should really start using. MFA on way home from Poole at the moment (via London!) and the dear girl rang me in great excitement to say that she had just passed a Marco PW restaurant. She has never seen a famous chef's restaurant before and neither have I for that matter. I am sure you have though being from London. I have previously only used 2 tsp - the notes for 2 tbs are for this (test) batch - I would go with 2 tsp .
