The original recipe has 2.5 kg of noodles, which I can only assume is a typing error as the dish is for 2. 2.5 kg of dry noodles would feed 20 people I would guess.
For two I have used 160 g of dry (egg) noodles which equates to 600 g of (wet) cooked noodles which was more than enough for two so have amended the recipe accordingly.
I used egg noodles as I personally much prefer them to rice noodles, which I find rather bland.
After cooking and tasting I have also halved the amount of light soy sauce from 4 tablespoons to 2, otherwise the dish just tastes of soy sauce.
