Sun dried tomato purée or paste is a relative newcomer in culinary terms. It is a purée made from sun dried tomatoes that have mashed or mechanically chopped to the desired consistency. It has the distinct flavour of sun dried tomatoes and is an easy and effective way to lift a dish.

It is available in jars, usually in oil and also in tubes.

Tunisian kitchen trick

A tip from from `Jeffry Steingarten's "The man who ate everything", ISBN 978-0747260974, which he learned from a visit to Tunisia, where they use tomato puree an awful lot, works equally well with sundried tomato purée. Briefly sauté the sundried tomato paste in a little olive oil to remove the metallic preserved taste that it can have.
