Soria cheese

Soria cheese is produced throughout the province of Soria and especially in the area of the capital itself.

Four artisan cheeses are produced. The first is a fresh one, similar in style to Queso de Burgos cheese. The others are hard and are made with cows’ milk (matured for 45 to 60 days), ewes’ milk (matured for at least six months) and a mixture of the two at a proportion of 70% and 30%, respectively (matured for at least 60 days). The milk is pasteurised and animal rennet is used.

The cheeses are salted by immersion in brine and aged in a controlled environment for the period that corresponds to each type.
