Serranía de Ronda cheese

Serranía de Ronda is a semi-hard, unpasteurised goats’ milk cheese produced in the mountains around Ronda in the province of Málaga.

The ivory coloured cheese has small irregular holes and a layered, crumbly texture which develops with age. The more mature cellar aged cheeses have a brown rind, whereas others which have been soaked in oil have a waxy yellow rind. It is matured fro 2-3 months depending on the season.

The cheese is quite strong, with a goaty aroma, which can become rancid after a while. The flavour is slightly acid and salty, leaving a tangy aftertaste.

The cheese is cylindrical and between 1 and 2 kg.
