Samphire

Marsh samphire

Samphire is a name given to a number of very different, edible plants, that happen to grow in coastal areas.

For culinary purposes, certainly in the United Kingdom, marsh samphire, (shown) is the one you will usually find. I've seen it in fishmongers a few times.

Boil it or steam it for a few minutes and serve with butter, rather as you would asparagus. Because is has a salty, sea-like flavour it is a good accompaniment for fish dishes.
