Rigatino di Castel San Pietro is a mixed milk cheese from Castel San Pietro in Emilia-Romagna. It is made with three parts ewes' milk to one part cows' milk and is produced throughout the year. Matured for up to 40 days, it has a cylindrical shape with a soft, pale yellow rind. The interior is compact and has a sweet taste.
