Raviggiolo di pecora pistoiese cheese
Raviggiolo di pecora pistoiese is a fresh ewes' milk cheese produced from October to March in the Pistoia province of Tuscany. Milk is poured into vats and brought up to a temperature of 38°C. Rennet is added and after about 40 minutes the curd is collected and put into moulds for 6-7 hours. It has the shape of a truncated cone and weighs about 500g. White in colour, it has a sour and salty taste, a soft texture and an aroma of milk.
