Pratolina cheese

Pratolina is a soft, pasteurised goats' milk cheese produced in the Tuscan province of Grosseto from March to October. The goats are raised in the wilderness and fed with a mixture of green fodder and dry products. After coagulation, the curd is inoculated with penicillium candidum, and then it is put into moulds. After several days of drying, the cheese is left to mature for a few months. It has a cylindrical shape, white colour, creamy texture, and a persistent flavour and aroma. It weighs about 300g.
