Pecorino fresco e stagionato as the name implies, is a ewes' milk cheese which can be made 'fresh' or 'matured'. It is produced in the Italian region of Campania. The fresh variety is soft and white with a slightly creamy appearance. This cheese, although fresh, has a special aroma and taste of milk even from the first day. The matured version (usually 8 to 14 months), has a very compact interior which is sometimes brittle. It has a strong flavour, enhanced by spiciness which makes it an excellent cheese for grating.
