Nam som prik dong (Thai Vinegar with Chili)

  1. Use clean, sterilised glass jars with plastic lids, metal lids will rust
  2. Add 1 measure sliced fresh red chillies to 2 measures white wine vinegar
  3. Add a good pinch of salt
  4. Mix well
  5. Refrigerate, shaking now and then
  6. Should keep for 3 months if refrigerated
