Mozzarella Silana cheese
Mozzarella Silana is produced in areas of Cosenza and Catanzaro in Calabria, but is also available throughout Italy. However, it is a cows' milk cheese that is made in limited quantities and on request, during the summer. Rindless, it has a spherical shape, and is elastic, uniform, and milky white. It has a diameter of 10-14cm with a height of 4-5cm and a weight of 400-500g and tangy, lactic flavour. It is a spun cheese which is wrapped in reeds or ferns. Unusually, this Mozzarella is consumed as a table cheese and not used for cooking.
