Grande Vecchio di Montefollonico cheese

Grande Vecchio di Montefollonico is a pasteurised ewes' milk cheese produced in the town of Montefollonico, province of Siena in Tuscany.

After chilling and storing the milk is curdled with natural calf rennet. The curd, after cutting, is poured into moulds. It is then dry-salted, and finally cheese is matured in an air conditioned room for about 300 days on metal grids. The rind is then treated with olive oil.

The cheese has a cylindrical shape is produced in weights of between 4.5 and 9 kg, heights of 8 to 18 cm and diameters of 20 to 35 cm. The rind is grey and streaked, while the interior is smooth, pale yellow and has a slightly spicy flavour.
