Friesian clove cheese

Friesian clove cheese (Friese Nagelkaas) is a Gouda-type produced in the Friesian Islands.

It is a semi-hard, cows’ milk cheese and can be made from either whole or skimmed milk. Sometimes fresh buttermilk is also added. It has a yellowish-brown rind.

Spiked with cloves and at times cumin as well, the cheese has a tangy, spicy taste, but mild at the same time. It can be matured for 3-6 months and is produced in wheels of up to 10 kg.
