Formaggio del Cit cheese

Formaggio del Cit is a cheese made from a cheese in Val Tramontina in the Friuli-Venezia Giulia region of Italy. It is produced using existing cows' milk cheeses which have already been matured for at least 6 to 7 months. The cheese undergoes two millings, a coarse one and a finer one, using a meat mincer. It is mixed well with milk and cream, then salt and pepper are added. It is consumed immediately, but is only produced in small quantities in the province of Pordenone for connoisseurs.
