Erborinato di Artavaggio cheese
Erborinato di Artavaggio is a blue-veined, unpasteurised, cows' milk cheese which is only made by one producer in the Val Taleggio in Lombardy. It is matured for at least 3 months and is cylindrical in shape with a diameter of about 20 cm and a weight of 4-5 kg. The wrinkled bloomy rind is pink and grey and the interior is compact and straw coloured, with the typical blue marbling.
