Craquegnon affiné à la bière is a soft, cows' milf cheese from the Nord département of the French region of Nord-Pas de Calais. It is macerated in La Gauloise beer for 2 or 3 days, before being matured for 80-100 days. For this reason, the cheese is also known as La Gauloise. It is sometimes presented as an ancestor of Maroilles and has an orange rind. It is 13cm square, 5cm high and 900g in weight.
