A cheese press is a device used to exert a constant pressure on cheese during the manufacturing process. The cheese is usually wrapped in cheesecloth and placed inside a 2 part cheese mould. This step helps to bind the curds together and is usually completed over a 24/48 hour period.
Commercial presses are available, but there are many ways for the home cheesemaker to improvise one.
