Casècc cheese

Casècc is an unpasteurised cows' and/or ewes' milk cheese from the Montefeltro area of the Italian region of Marche. It is produced from October to March.

The cheese is matured for 1 month to 1 year in a cool, damp environment and are turned daily for the first 10 days. It is then placed on walnut leaves for 8 days then stored in the in the characteristic terracotta jars.

The cheese has a height of 4-8 cm, is 14-22 cm in diameter and weighs 700g to 2 kg. It has a straw-yellow rind, amd a the interior is smooth, translucent and firm without holes. It has a pleasant, mellow flavour.
