Abbaye de Citeaux cheese
Abbaye de Citeaux cheese is a semi-soft cheese produced from unpasteurised milk of the abbeys' white Montbéliande cows by the monks in the Abbaye de Cîteaux. The cheese is matured in three weeks, during which time it is washed in water on a weekly basis to slow the mould growth. It is a creamy, yet rubbery cheese with an earthy flavour. it can be purchased directly from the abbey.
