Caprino del Cilento is a basket-moulded [[cheese]] produced in the province of Salerno from goats’ [[milk]].

Having a cylindrical shape the [[cheese]] has a slightly sweet and fruity flavour when made with calf [[rennet]] or when it is fresh.  If is mature, or kid [[rennet]] is used, the taste is more intense and spicy.

After being in the basket mould for 2 days the [[cheese]] is matured for one month or more, depending on whether it is to be consumed fresh, or made suitable for grating.
