Method

  1. Melt the butter in a large pan.
  2. Add the beef and lightly brown over a hight heat.
  3. Remove the meat and reserve.
  4. Sauté the onions in the same butter until soft.
  5. Stir in the flour and cook until it is light brown.
  6. Gradually add the beer until the sauce is thickened and smooth.
  7. Add the meat, bay leaf, thyme, parsley, sugar vinegar, salt and pepper.
  8. Cover the pan and allow the meat to simmer slowly for 1 hour.
  9. Spread the bread with the mustard and place in the pan.
  10. Cover and simmer for a further hour.

Serving suggestions

Serve with boiled potatoes and vegetables
