Dressing

Method

  1. Add the noodles to a pan of boiling water and cook until al dente.
  2. Drain, rinse under cold water and leave to drain further.
  3. Tip into a bowl and mix with both of the oils.
  4. Place the zest in the pan and cover with cold water.
  5. Bring to the boil, drain, rinse under cold water and drain again.
  6. Mix with the noodles.
  7. To make the dressing, mix all of the ingredients until smooth.
  8. Combine with the noodles and serve.

Serving suggestions

Wonderful as part of a buffet lunch or as one of a selection of salads to accompany a barbecue.
