Caramel colouring is a water soluble food colouring; it is made by the carefully burning sugars. It is more fully oxidized than caramel candy and has an �odour� of burnt sugar and a somewhat bitter taste. Its colour ranges from pale yellow to amber to dark brown.
As it usually only contains an E150 variant (caramel), salt, water and glucose syrup it is normally suitable for vegetarians.
