  • Preheat the oven to 190° C (375° F - gas 5)

Method

  1. Beat the butter and sugar until light and fluffy
  2. Sift the flour, baking powder and salt into a bowl and set aside
  3. Add the flour mixture slowly to butter mixture and mix well
  4. Mix the vanilla, half of the flour mixture and half of the milk
  5. Mix in the beaten eggs
  6. Add the remaining milk and the rest of the flour mixture and mix until smooth
  7. Fill a greased baking tray
  8. Bake for 25 to 35 minutes until cake springs back when lightly touched near centre
