Y Fenni cheese
Y Fenni is a variety of Welsh cheddar cheese made with mustard seed and ale and is produced from pasteurised cows' milk, which is curdled with vegetarian rennet. It takes its name from the Welsh name of Abergavenny, a market town in Monmouthshire. Y Fenni is also known as Red Dragon, a name derived from the dragon on the Welsh flag.
The cheese is pressed into moulds and wrapped in a protective pale yellow or red wax. A whole cheese measures about 30 cm diameter and is 10 cm deep. It has a creamy and buttery taste and the mustard seeds add a lovely tanginess, and the flavour of the ale is noticeable, but not overpowering.
