- 180g extra virgin olive oil
- 30g vinegar
- Pepper
- Salt
Method
- Put the nuts in TM and grind 3 seconds / Speed 7.
- Add the remaining ingredients and mix 1 minute / Speed 1.
- Stir to mix the ingredients.
- Serve at room temperature.
Serving suggestions
This is a vinaigrette suitable for dressing salads (rocket, lettuce, Swiss chard, leeks, peas) and to accompany pasta, fish and seafood.
Variations
The cashews can be substituted with pistachios, toasted pine nuts, walnuts or other nuts. It combines well with other sauces, such as cheese.
