Valdeteja cheese

Valdeteja is an unpasteurised, whole, goats’ milk cheese produced in the areas of Arintero, Montuero, Noceda and Valdeteja (León) from late winter to early summer.
The cheese is matured for at least a month and that if oiled, it may be stored for up to six months. The mouldy rind is rough and the interior is firm. It can be white to yellow, depending on its age and has a gentle but persistent flavour with a slightly spicy aroma.
The cylinder-shaped cheese weighs around 1 kg and it is recommended as an appetiser.
